Seri muka recipe

Bottom layer:-
500gm glutinous rice
400ml coconut milk
1-1.5 tsp salt
2 tbsp fragrant oil(optional)

Top layer:-
120gm plain flour
3 tbsp corn flour
140gm sugar
3 eggs
450ml thick coconut milk
1-2 tsp pandan colouring or flavouring


Steps:
For the bottom layer:-
Soak rice for 1-2 hours
Boil water for steaming.
Mix top layer ingredients together
Pour in bottom layer mixture and steam for 20-30 mins(you should get a slightly damp rice consistency)-
Toss/fluff the rice and then flatten the rice(to prevent the top layer mixture from sipping in)- jus compact slightly

For top layer(can be done when steaming rice):
Beat sugar with egg for a while.
Add in the coconut milk +salt
Add in the flour and mix until you get no bits of flour- smooth consistency.
Add in the pandan colouring- to the colour you like
Pour onto the rice layer and steam with medium fire. Steam until you get a firm consistency but not too dry.(30 mins to 1 hr)
Wipe the lid dry so that water will not drip onto the top layer
REMEMBER – the kuih should be chilled before cutting


My first try was using micro and it doesnt taste as nice as steaming...and rice was dry

I am sick of seri muka liao...

coz it was another recipe which was meant for microwave...which i tot it's would be simpler.
